A cookie that’s more like a meal! White chocolate and peppermint make a festive holiday cookie that you will be excited to share.

If you have a cookie exchange, this is a fun cookie to add. 

The white chocolate adds a rich flavor to the cookie which works so well with the peppermint. The cookie isn’t too sweet the filling and candy adds enough sweetness. 

I’m more of a dark chocolate fan, and I can’t wait to substitute the oat flour with dark chocolate cocoa powder and mix up the flavor. It would still be great with the filling and peppermint candies!

You could make both and have one dark cookie side and one white chocolate cookie side. How fun would that be? 

You could even dip the edge of each finished cookie in chocolate…dark or white, whatever floats your boat.

  1. Preheat oven to 375 and line 2 cookies sheets with parchment paper or lightly grease.
  2. In a small saucepan over medium heat, melt 4 tablespoons butter and white chocolate chips until completely melted, whisk until smooth and allow to cool slightly.
  3. In a large bowl, whisk together sugar and eggs. Add the melted chocolate mixture and stir until smooth.
  4. In a separate bowl whisk all purpose flour and oat flour, add baking powder, baking soda and salt. Add to the wet mixture and mix well.
  5. Using a small scoop, place dough 2" apart on cookie sheet to make uniform sized cookies. Bake for 10-11 minutes just until the edges are slightly brown. Remove from oven and cool on cookie sheets.
Filling
  1. Using a hand mixer or stand mixer, beat butter until smooth. Add powdered sugar slowly, and then milk and peppermint extract and mix until smooth. Spread a tablespoon of filling on half of the cookies, top with the remaining cookies and press until filling that just starts to squeeze out the edges. Roll in crushed peppermint candies. Keep chilled until served.
