Simple, fast vegan, egg-free homemade pasta recipe. This has the traditional melt-in-your-mouth texture of homemade Italian pasta but without the eggs! Great for vegans, vegetarians, or those with egg allergies or sensitivities.

Instructions
- In a large bowl or stand mixer, combine the flour and salt. Add water and stir to make a firm dough.
- Shape the dough into a ball and turn out onto a lightly floured surface. Knead for 10 minutes by hand, or let the dough hook of your stand mixer do the work.
- Cover with plastic wrap and let rest for 15 minutes.
- Roll out dough using rolling pin or pasta machine. Work with a 1/4 of the dough at one time. Keep the remaining dough covered, to prevent from drying out. Roll out by hand to 1/16 of an inch thick. If using a machine, stop at the third to last thickness setting.
- Cut pasta into desired shapes and dust with flour to prevent sticking. Cook fresh noodles in salted boiling water for 3 minutes. Drain and serve with your favorite sauce.
