Alfredo. 

I feel like that’s all I need to say! Oh, except vegan….Vegan Alfredo. Does that get your attention?

That literally could be my whole blog post, because I know I don’t need to convince you to have Alfredo Sauce.

Everyone loves Alfredo Sauce, as much as they love pasta. 

I can honestly say, I don’t know anyone that doesn’t like pasta. 

The only thing that could ever make Alfredo Sauce better is, when you can make one much lower in calories AND plant based. 

This is another recipe from my daughter and (best assistant ever) Danni. 

Since this recipe is vegan, the base ingredients are cashews, non-dairy milk and nutritional yeast. 

I have to admit, I was skeptical about a vegan Alfredo sauce. How could an Alfredo sauce without cheese really be good? 

The cashews combined with water will create their own milk which is why we use little non dairy milk. Don’t be scared by the thin consistency when it’s blended, it will thicken as it heats.

With some miso, it becomes a creamy flavorful sauce that has a unique flavor that you just become instantly addicted to.

Instructions
  1. In a high speed blender, combine all ingredients. Blend on high for 1 minute or until completely smooth.
  2. Transfer mixture to a small saucepan and heat on medium, stirring frequently, until sauce thickens to desired consistency. If the sauce gets too thick, add a few tablespoons of pasta water or non dairy milk to thin.
  3. Serve with pasta of choice (makes enough for 12 oz of pasta.)
