Ingredients
- 1 Tablespoon olive oil
- 1 large yellow onion
- 4 cloves chopped garlic
- 2- 2 lb cans whole or diced tomatoes
- 1 small can tomato paste
- 2 C chicken or vegetable stock
- 2 C heavy cream or 1/2 and 1/2
- 1/2 C fresh basil chopped
- 2 teaspoons dried basil
- 1 teaspoon salt or more to taste
- 1 teaspoon pepper
- 1/3 C Sugar
- 2 C asiago cheese

Instructions
- Saute onion in olive oil until translucent. Add garlic and tomatoes with juice, tomato paste, fresh basil, dried basil, salt, pepper and sugar. Stir, then add stock and bring to a boil. Reduce heat and simmer 30 minutes. Use an emulsion blender (or regular blender 2 cups at a time) to blend until smooth. Add heavy cream or 1/2 and 1/2 and simmer for another 1-1/1/2 hours. Add asiago cheese and simmer until just melted. Serve.
