Cranberry and Orange go together like peanut butter and jelly, popcorn and soda, chips and salsa. But it gets even better, because these Cranberry-Orange Cookies are dipped in chocolate…dark chocolate. Which makes them taste like those yummy chocolate oranges!

This is a super fast and easy recipe to make.

If you didn’t dip them in the chocolate, you could whip them up for breakfast….just like a cranberry orange muffin.

Okay, I would probably still dip them in chocolate. They say chocolate is healthy, right? This is dark chocolate, so it’s extra healthy! wink wink.

I did make these cookies as part of my Christmas Cookie Box, but this is a recipe you’ll want to make all year long.

Instructions
  1. Using either a hand mixer or stand mixer, mix the butter and sugar until smooth, then add eggs one at a time, and then the orange juice, mix well.
  2. Add the flour, salt, baking soda and zest and mix until incorporated. Fold in the cranberries by hand. Refrigerate 1 hour.
  3. Set oven to 350. Using a teaspoon, or a scoop, place dough 2" apart on a cookie shoot lined with parchment paper or lightly greased.
  4. Bake 13-15 minutes, or until edges start to turn brown. Cool completely.
  5. If you want to dip your cookies in chocolate, slowly melt the chocolate chips in a small pan over the stove, or in a glass bowl, microwave 30 seconds at a time stirring in between. It should only take 2 rounds, maybe 3 at the most in the microwave. Don't over-cook the chocolate. Dip the edges of each cookie in the chocolate and place back on the cookie sheet and allow to dry, putting them in the refrigerator will speed this up.
