I had a case of oranges, so I have been trying to find ways to use them. I squeezed a good amount of them into orange juice and immediately thought about orange pound cake.
But, pound cake has a lot of butter. I wanted to come up with a little bit lighter version. This recipe removes 3/4 of the butter, that’s like 75%!…and replaces it with greek yogurt, which helps make it moist.
You won’t miss the extra butter at all!
Pound cake is called pound cake because traditionally, it uses a whole pound of butter…ouch!
I couldn’t resist, I looked it up…a pound of butter is four sticks. Four sticks of butter has 3,240 calories!
That means you could literally gain just about one pound of fat eating a whole pound cake.
Well, you probably wouldn’t eat the whole cake, right?
(I may or may not have ever eaten a whole pound cake… several different times.)
But, you are going to WANT to eat this whole pound cake…and you can for 1/4 of the butter calories, since it only has one stick of butter.
It’s like diet pound cake.
